[livejournal.com profile] ptor and I spent a very quiet Thanksgiving here at home. We were supposed to go to my parents' but my mom had the flu and we didn't want to risk exposing me to anything else. Also, I am still awfully tired from the pneumonia and was wary of being exposed to too many other germs so while we would have loved the company, we passed on attending [livejournal.com profile] serenejournal's dinner and instead hung our here with a small outing to Don Edwards preserve for a walk. It was a nice, quiet day and we had a lovely dinner together.

Here is the veggie feast I fixed for us:

We started with an appetizer of Fuyu persimmons with blue cheese and pecans.

Then we had mixed baby greens salad with bosc pears, blue cheese, pecans and homemade balsamic vinaigrette.

Then we moved on to the main course of fingerling potatoes roasted with red onions, garlic, fresh thyme, and olive oil and bean and vegetable soup.

The soup was made in the slow cooker, with white beans cooking overnnight with onion, fresh thyme and garlic. In the morning I added celery, carrots, garlic, and potatoes which had been sauteed together in olive oil as well as tomatoes, broth and more fresh thyme.

We finished the evening with a pear apple crumble made with amborsia and granny smith apples and anjou and bosc pears.
