dinner 08/20/09
Aug. 21st, 2009 12:04 amDinner tonight: Summer squash and leek melt (veggies baked with brown rice and some cheese, tweaked recipe from 1,000 Vegetarian Recipes), Chunky Chickpea Soup (from The Essential Vegetarian Cookbook), and green salad with cherry tomatoes from our garden. First time I made this particular soup and it was quite good and rather reminiscent of split-pea soup. We all enjoyed it. I easily adapted the recipe for the pressure cooker as I did not have time to make a bean soup from dried beans without the use of one. The cherry tomatoes were so, so good. There are so many more out there which is exciting.
