Having been inspired by a tasty risotto primavera out at dinner on Friday night, I decided to try my hand at risotto for dinner tonight. Despite cooking for many years I have never made risotto. I adapted and embellished from recipes in Deborah Madison's "Vegetarain Cooking for Everyone" and wound up with a wonderful dish.
ptor and I were both very pleased. I will say that it is indeed a touch labor intensive, particularly for me at this point in pregnancy (standing in basically one place stirring the rice for ~20 minutes was almost too much). Regardless, it was fun to make and I will post the recipe and pictures soon. I used sunburst squash, snap peas, orange cherry tomatoes and basil and it was a lovely combination. I have been very disinterested in cooking for most of my pregnancy, so it was nice to feel inspired and not too sick to enjoy it.
In other cooking news,
ptor and I picked up a book on canning tonight as we are going to faced with an enormous tomato crop and would like to preserve whole tomatoes and tomato sauce. Who knows if we will actually be able to accomplish this with the baby, but we can try, right? We'll see. I also picked up Madhur Jaffrey's "World-of-the-East Vegetarian Cooking". Both books were used (purchased at Half Priced Books) which made them cheap and I like picking up others' cast-offs. I showed much restraint in only getting one new cookbook, though--that is a difficult one for me. I love cookbooks, even the funky old ones that mostly consist of things I would never eat. I also get a kick out of church or school cookbooks that were put together as a fundraising activity--I don't know why, but I do.
OK, we should go walk now before my ankles and feet swell even further.
