best risotto

klwalton I made risotto for dinner tonight. The culinary gods must have been smiling down on me because it was the best I've ever made. I used the Spring Risotto with Asparagus and Peas recipe from Annie Sommerville's "Field of Greens" and it was wonderful. I had no snap peas or fresh peas so I just tripled the amount of asparagus. I made the tomato-mushroom broth suggested for the recipe and it really did help make the dish all that it was. I have tried many different risottos and they were OK, but this one really stood out. I am pleased. And full.
